Summary of the idea/dream: I'm not sure to cook or not this dish for Valentine's dinner 

In my previous post, I wrote that my boyfriend is vegetarian and I don't know what to cook for St. Valentine's Day... as I want that both of us would enjoy the food...And my colleague, by the way just amazing woman recommended me to cook this dish "Baked beet". I'm not sure that this recipe is good for St. Valentine's romantic dinner, I'd like to know your opinion about this dish 
So here's the recipe:
Ingredients: 1.2 kg beet with tops (about 6 beets), 1/2 teaspoon ground cardamom, 1/4 teaspoon ground caraway, pinch ground cloves, 15 gram butter, 1/4 teaspoon salt.
Preheat the oven to 428 F. Remove beet bulbs from the greens. Set greens aside. Clean roots with the brush. Put beets on big baking sheet and cover it hermetically with the foil. Bake for 1 or 1.5 hour until beets become tender (check with knife). Put beets aside to cool. Peel beets and cut in cloves into wedges. Heat cardamom, caraway and cloves over the low heat in the 3 liter pot. Shake from time to time for
