I have found one of the recipes of a simnel cake and would like to share it with you here. Simnel cake is a small fruit cake with sultanas and candied peel covered with almond paste. By tradition, this cake was given to mother on Mothering Sunday as a sign of respect and it was a symbol of Mother's Day. Of course, you can buy a gift in a store but I think your mother will keep in mind a hand-made baked simnel cake for a long time. Let's start. You will need:
100g softened butter
100g muscovado sugar
4 eggs
a pinch of salt
350g mixed sultanas and currants
1 tsp mixed spice
150g plain flour
50g roughly chopped candied peel
the zest of 1 lemon
1-2 tbsp quince or apricot jam
300g marzipan
Preheat the oven to 140C. Stir up the softened butter and sugar together with a trowel or wooden spoon until they are fluffy and pale. Little by little beat three of the eggs in and then add the flour gradually, spice and salt at one stroke. Mix all it thoroughly,
