Summary of the idea/dream: Simnel cake is a small fruit cake with sultanas and candied peel covered with almond paste.
then add the mixed peel, lemon zest and sultanas and stir again. Grease a cake sheet. Roll the marzipan circle to the size of the sheet. You should take about 1 third of the marzipan. Pour half the mix into the sheet and then cover with the marzipan circle. Then pour the rest on top of the marzipan. Bake the simnel cake for an hour and a half then leave the cake to cool. Trim the top of the cake with apricot or quince jam. Then cover with another thin layer of marzipan and garnish with 11 marzipan balls (symbolizing the 11 disciples of Christ, except Judas). Finally ice the top with the beaten egg and bake for 10 minutes.
