Summary of the idea/dream: This recipe I learned when I was on the Caribbean Islands
When I was on one of the Caribbean Islands, I tasted a very delicious salad which components made a very unusual combination. But the salad was very tasty. Here is the recipe which I managed to get from the cook.
You will need the following to make this salad:
500-700 g of smoked chicken
200 g of celery stems
50 g of cashew nuts
500 g of mango (it usually comprised one fruit)
1-2 tbsp of white wine vinegar
2 tbsp of mayonnaise
150 g of yoghurt
salt, ground red pepper and 1 tuft of green onions
Skin the chicken and cut it into pieces. Peel the celery and tear the leaves away. Then cut the stems in thin round pieces. Fry the cashew nuts on a pan without grease. Peel the mango and cut into 4 pieces having removed the pulp from the pit. ¾ of the pulp should be cut in cubic slices. Make puree from the rest of it. Mix the mango puree with the mayonnaise, yoghurt and wine vinegar. Add some salt and pepper. Then mix the chicken meat, celery, nuts and mango cubes. Cut the onions
